Winter Fun: February 2

This morning, Punxsutawney Phil emerged from his burrow to predict whether we’re in store for an early spring or six more weeks of winter. Celebrate the weather-forecasting critter this Groundhog Day with this easy recipe.

Groundhog Pudding Cups

You’ll Need:

  • Pudding cups
  • Nutter Butter Bites
  • Nature Valley granola thins
  • Black writing icing
  • White cake icing (either in a pastry bag or the can/tube with a fitted writing tip)
  • Edible markers in pink and black
  • Coconut
  • Green food coloring

Make the base: Put some coconut in a zipper bag and add a few drops of green food coloring. Zip the bag and shake around until you have “green grass.” Open up a pudding cup and push down pudding that’s stuck to the top. Add a layer of the green-colored coconut.

Make the groundhog: Your base is the granola thin. Next, use icing to glue on two Nutter Butters for ears. Then use the white and black icing to pipe on eyes. Use edible markers to make a nose and mouth. For the finishing touch, use the black and white icing to draw the groundhog’s teeth.
