Moms' Recipe: Healthy Cupcakes for School Parties


Newish school-party regulations put the kibosh on treats that contain too much sugar, and widespread food allergies mean that certain ingredients (nuts especially) are a definite no-go. MomSpeaker Trina O'Boyle shares her chocolate cupcake recipe that's so healthy and yummy, it'll satisfy school rules yet not disappoint kids' sweet teeth.    

If you have a child old enough for preschool or elementary school you have experienced a school party. Most schools have about seven parties — Halloween, Thanksgiving, Holiday, Valentine's, St. Patrick’s Day, Spring Party, finishing off with the end of the year party. Now let's throw in everyone’s birthday, and if your child’s class has about 24 kids, then that is 24 weeks + 7 parties of processed unhealthy treats your child is getting during the school day. That means your child is getting some sort of junk food almost every week of the school year, because typically schools run on a 36-week schedule. That’s a lot of junk!

One of my goals as a educator is to share healthier options so parents see that making our own sweet treats is not only healthier for our children but actually more cost-effective. One of my favorite quotes from Michael Pollen is “Eat all the junk food you want as long as you make it yourself.” Next time you are at the grocery store thinking about getting those bakery mini cupcakes for your child’s party, check out the ingredients. You might think, OK I’ll just purchase a cake box and make cupcakes. Just remember this tip — “If a 3rd grader can’t pronounce it, don’t eat it”. 

Ok, now that you are officially grossed out, how about a different option? This healthier option is still yummy and so easy to make!

O'Boy Organic's Healthy Chocolate Cupcake for Class Parties

Prep time:  10 mins

Cook time:  20 mins

Total time:  30 mins

Serves: 12 large cupcakes


  • 4 oz. organic applesauce
  • ½ cup raw sugar
  • 1 egg
  • ½ cup water
  • 8 oz. plain greek yogurt
  • 2 tsp. vanilla extract
  • 1 cup whole wheat flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ cup mini chocolate chips


  1. In a large bowl mix together all dry ingredients — flour, cocoa, salt, baking powder, baking soda, sugar.
  2. In a smaller bowl mix together the wet ingredients — applesauce, yogurt, vanilla, water and egg.
  3. Combine all ingredients together.
  4. Fold in the mini chocolate chips
  5. Prepare the muffin tins with muffin liners. Divide batter evenly among the cups.
  6. Bake for 5 minutes at 425º then reduce heat to 375º and continue to bake for 13 more minutes.
  7. Insert toothpick into the center of one muffin. If it comes out clean they are done. If not continue to bake for 2 minutes.
  8. Remove from the oven and let cool completely before frosting.
