Baby Food Recipe: Mango Madness

With our annual Baby Issue debuting next week, we've got babies on the brain. Here, learn to make blogger Trina O'Boyle's yummy Mango Madness, an organic baby food that requires just a few easy-to-find ingredients, an immersion blender and a couple of ice cube trays.

Many mango varieties are in season at the moment. Mangoes are not the cheapest fruit on the market, so it's best to purchase in season or frozen. Mangoes are one of the first foods for babies 7 months and older. Mangoes can be very watery so it's best to mix with a grain, I also like to incorporate tofu in this mixture I call "Mango Madness." 

Mangoes have all the basic vitamins, protein and fiber that your baby needs for a meal. When making a mango purée, make a large batch that you can freeze in 1-ounce ice cube trays. Then when you want to feed your baby just take out as many cubes as you need and put the rest back in the freezer. You can defrost overnight in the fridge or on the counter top. It's best to feed your little one foods that are room temperature so you don't have to heat up their food when traveling or out and about.

Mango Madness

Ingredients

  • 2 ripe mango's peeled and cubed
  • ½ cup of barley, cooked as directed
  • 4 oz. firm non-GMO tofu
  • water – use as much as you need to make the right consistency for your baby

Directions

After the barley is cooked, place it into a bowl with cubed mango and tofu. With an immersion blender, mix on high until the mixture is as smooth as you desire for your baby. If you need to make it smoother, add a bit of water a little at a time.

Remember: Each baby is different and requires different consistencies, so taste-test the food before you place it in the ice cube trays.

After the Mango Madness is frozen, take out of the ice cube trays and place in a baggie labeled with the name of food and the date frozen.
